A mano is the newest classic Italian restaurant in Power Plant Mall. It’s Amado Fores’ first foray into the family business, so to speak, of setting up Italian restaurants that change Metro Manila’s dining landscape.
Yup, Amado belongs to the Fores clan. His mom Margarita Fores gave us Cibo and Grace Park, while the rest of the family manages some Rockwellist favorites like CDP Global Table, Mamou and Made Nice.
a mano promises a fresh and faithful take on classic Italian fare. To live up to that promise, they use only fresh and artisanal dry pasta to make every dish as close to traditional as possible. After all, amanomeans “by hand” in Italian.
One of the things that stand out in a mano’s open kitchen is the red brick Valoriani oven where traditional Napoli-style pizzas are fired up.
Fores and his hardworking team picked up fresh pastamaking tips from Casa Artusi’s chef Carla Brigliadori, who flew in from Italy a few weeks before a mano opened its doors to the public in September.
