Tibuk-tibuk, pastillas and shing-a-ling with chocolate? In a bar? Trust the adventurous Kapampangans to come up with culinary surprises.
As the Rockwell community at Nepo Center begins to make its mark in the region, the brand introduces The Rockwellist Confections Pampanga Series. Pampangabased chefs Dennis Lim of Denlim’s Kitchen and Judy Uson of Cafe Noelle collaborated with Christian Valdes of CMV Txokolat to bring Rockwellists a taste of the culinary capital’s distinct flavors.
Lim and Uson combine the flavors of food items that are popular in Pampanga with CMV’s luscious chocolate, resulting in a harmonious blend that is both comforting and delightful.
There’s the accessible snack shing-a-ling and the ubiquitous kasoy melded with chocolate. It’s all at once tangy, crunchy, rich and nutty. This unique combination provides a textural contrast that will keep you coming back for more.
Next on the list is pastillas de calamansi, a refreshing rendition of the classic pastillas. The zesty notes of calamansi are skillfully balanced with the creamy sweetness of pastillas, creating a treat that captures the essence of tropical indulgence.
For those who crave a nostalgic taste of childhood, Lim takes the familiar champorado and transforms it into a chocolate bar. With its rich chocolate flavor and subtle hints of rice, this creation is a thrilling homage to a breakfast staple.
To round out this extraordinary collection, Uson’s tibuk-tibuk takes center stage once again. Its velvety texture and exquisite taste perfectly complement the bold flavors that define The Rockwellist Confections Pampanga Series.
Soon, the L.A. Cheesebread Bar will be making its way to your taste buds. Inspired by Pampanga’s popular baked goodie, it fuses the buttery goodness of cheese bread with the indulgent sweetness of a chocolate bar.
Each confection in the collection tells a story celebrating the rich flavors and traditions of the Philippines while pushing the boundaries of taste and texture. These likewise offer Rockwellists an opportunity to savor a taste of the Kapampangans’ diverse palate as the brand grows its presence in the region.
